A Macaron Tower or a Favor for Every Guest, Often Both
Couples come to Rêve Pâtisserie for one of two things: a macaron favor waiting at every place setting, or a macaron tower standing in for the wedding cake. Many end up booking both. It is a small, particular kind of craft, and Julie Hutton treats it that way. She believes the moment guests actually remember at a wedding is rarely the grand gesture, it is the small, considered detail sitting on the table when they walk in, and a hand-piped macaron with a couple's initials painted in gold is exactly that kind of detail.
Every macaron is piped to order in Julie's Santa Barbara kitchen, built from ingredients chosen as carefully as the flavors themselves: almond flour from regeneratively grown organic California almonds, cream from Straus Family Creamery, and pistachio from a grower just a few miles away. Colors come from turmeric, beet, and spirulina by default, though couples who need an exact match to their wedding palette can opt for conventional coloring instead. Deliveries go out by electric vehicle, both for precise temperature control and a lower carbon footprint on the way to the venue.
The two formats work differently on the day. Favors arrive as two macarons in a clear box, tied in a couple's ribbon color, with initials hand-painted in gold on request, Julie once made 200 of these for a wedding at Rosewood Miramar in Montecito, then shipped another 160 overnight to a couple's wedding in Napa. Towers scale with the size of the celebration, from five tiers for an intimate dinner up to twelve for a large reception, and Julie personally delivers, builds each tower on site, and takes it down again at the end of the night. A few practical notes worth knowing before booking: the macarons are naturally gluten-free, though made in a kitchen that is not a certified gluten-free facility, dairy-free and soy-free versions are available on request, and because the shells are built on almond flour, tree-nut allergies can't be accommodated. Tastings and design consultations happen by appointment, delivery is free within Santa Barbara, Goleta, Carpinteria, and Montecito on orders over $150, Julie will travel up to 100 miles beyond that, and favors ship nationwide for couples planning a destination wedding elsewhere. She asks for at least two weeks' notice before the date.
Based in Santa Barbara, Rêve Pâtisserie serves weddings throughout Santa Barbara, Montecito, and California's Central Coast, working directly with couples as well as the planners and caterers who need dessert tables that hold up under scrutiny: consistent shells, closely matched colors, and white-glove delivery and setup from a small local atelier they can put in front of even their most discerning clients.
Meet Julie, the pâtissière behind Rêve Pâtisserie in Santa Barbara
"I'm from Bordeaux, and I've had a sweet tooth my whole life. I baked with my family growing up, long before any of this was a business. Before Rêve, I worked in hospitality as a concierge and travel planner, and that work taught me something I still believe: the moment people remember isn't the grand gesture, it's the small, considered detail waiting on the table when they walk in.
Somewhere along the way, the macaron became the baking challenge I had to get right. I taught myself, one batch at a time, and I've become exacting about it, real almonds, real fruit, incredible chocolate and cream. I make every one by hand, here in Santa Barbara."
